Wish List: The Japanese Grill

Japanese. Grill. What’s not to love in those two words, together?
Grill-specific cookbooks make up only about 10 percent of my total cookbook collection, but The Japanese Grill sounds like a worthy addition. Although some of the recipes look like regular American dishes flavored with some soy sauce and ginger, and there are fewer vegetable recipes than I would have hoped, the yakitori section and fish and meat recipes loaded with bold flavors look to make up for it.
Over at Serious Eats, they have an adapted recipe for the Skirt Steak with Red Miso from the book, which looks easy and sounds like a perfect storm of umami goodness. It also reminds me that it’s been a while since I’ve made my miso-marinated salmon. (Mix together white miso paste, a little soy, and a little mirin till it tastes right and is a thin paste you can spread over the fish. Let sit in the refrigerator for an hour or so. Take it out and grill.)
